Our white bean and arugula soup won an award from Charlotte Magazine as the editors' pick for best soup in the city. There's nothing commercial about this winner—it's as close to homemade as you can get without being at home. We start with a big pot of chicken stock on the stove, adding white Italian cannellini beans that have a smooth texture and nutty flavor. A little garlic, plenty of white wine, some pancetta (an Italian bacon that is cured without smoking), and spicy arugula are stirred in to taste and...well, we can't tell you all of our secrets!
