Pasta & Provisions began in 1992 in its current Myers Park location in Charlotte, North Carolina. The owners, Tommy and Debbie George, believed that local residents would love the taste and convenience of fresh pasta. They and their three sons lived in Boston where Tommy successfully marketed the fresh pasta of Capone Foods. He began working for the legendary cheese and meat supplier while a student at the University of Massachusetts Boston, selling off the floor at the company's historic storefront in Boston's Haymarket district. After graduating with a major in Spanish, Tommy helped the company expand into pasta, building a wholesale customer base of 150 restaurants and hotels.
The Georges spent six months writing a business plan, working at night after the boys went to bed. They were able to get a loan and in September 1992, they moved to Tommy's hometown of Charlotte, sinking their funds into the new venture. Two months later, on the Wednesday before Thanksgiving, they opened Pasta & Provisions. Although they closed early that first day—a customer wanted a wedge of cheese and no one in the store had a knife—they had made $100. Within nine months the retail shop and wholesale business had expanded; by the end of the first year they had sold a half million dollars of pasta and provisions, far exceeding expectations. The nights they had spent in Boston writing out a business plan to take to Charlotte banks had paid off. They had become entrepreneurs.
